I like the idea that maybe some of the books were gifts from people that "know you're a chef" so... cookbooks at Christmas... but never hit the mark in the actual book they pick
Haven't watched the show so don't know how this one fits in but he had "Kitchen of Light" by Andreas Viestad of New Scandinavian Cooking fame in there. I have this one too and it has some good recipes.
When we watched The Bear, it was really the Ed Levine memoir and David Chang/Priya Krishna’s Cooking at Home that really struck me as not at all Carmy’s style.
I have that Ceil Dyer cookbook (Best Recipes from the Back of Boxes, Bottles, Cans and Jars)! I'm pretty sure my mother gave it to me back in the mid-80's when I was in college. Hilarious to see here. I loved The Bear. But maybe because I really love Jeremy Allen White.

I was very surprised to see a well-thumbed copy of Tom Park Bowles' The year of Eating Dangerously in the stack

I loved this! It's sad none of my IRL friends likes/loves cookbooks, but I'm happy I can comment here and people will understand!
