It came out in 2001, and while that is <whispers> 20 years ago, it is a fantastic, technique-focused tour of 400 different soup styles. Not a lot of fusion going on here, but a ton of classics from all around the world. And excellent notes on some recipes for garnishes and other additions that might expand a soup to meal status.
